Lemon

Description
The lemon is an important fruit of citrus  group. it is rank high as a health food. it is sometimes mistakenly for lime but lime is a smaller species and the lemon form a bigger variety with a rough, thin and lose rind.
     Lemon is oval in shape and light yellow in colour, with thick, rough skin. When ripe is has pale yellow pulp, abundant juice and a small number of seeds.

 
Food Value
The lemon is rich in many food ingredient, particularly citric acid. Different varieties contain this acid in different proportions ranging from 3.71%  to 8.40% . It is mainly due to the citric acid and vitamin C contents that the lemon is widely use in medicine, it is valued for it juice which id=s mostly use as an accessory for food. It increase the flavour and also increase the taste of various dishes.
it is often use in the preparation of salad and  prevent the discoloration of banana and apple. It is widely use in the preparation of lemonades. The lemon juice has a good keeping quality and can be preserved for a long time with precautions
